As a graduate student, grilled chicken is a go-to meal. I mean, it’s so easy to grill up a few chicken breasts and eat them throughout the week. Sometimes though, you need to spice up some chicken recipes with new flavor and serve it in a new way. That’s why I was pretty excited to find NEW P.F. Chang’s® Home Menu sauces at Walmart! I picked up the Teriyaki flavor (can’t go wrong with that) and whipped up some chicken that I made in 3 different ways.
Start by marinating the chicken breasts (or I used tenderloin) in the teriyaki sauce overnight. It helps to give the chicken more flavor. This really is grilling made simple. If you want to make the sandwich, go ahead and grill the chicken, but if you want to make kabobs, cut the chicken into 1-inch pieces first. The salad can go either way.
For the following three combinations, I tried my hardest to keep the ingredients similar and common. Onions and bell peppers are frequently in my fridge, so they made the perfect addition.
I also made them in an order that’s really easy to make throughout the week – perfect for using up the leftover chicken. The first recipe on the list is a chicken sandwich, perfect with the fresh grilled chicken. I followed it up with a salad, cutting up the extra chicken into bite sized pieces. Last for me was the kabobs, which I ended up doing last since I had extra chicken in the fridge. However, if you want to make the kabobs before the salad, the grilled pieces taste delicious on a bed of lettuce!
Sandwich
Additional Ingredients for the sandwich:
- Hawaiian Buns
- Lettuce
- Tomato
- Onion
- Swiss Cheese
- Pineapple
This sandwich was inspired by one of my favorites, so it was a pretty simple one to put together. I recommend putting all the fresh ingredients on one side and the cheese on the other and then putting the grilled chicken in the middle. This order actually helps to melt the cheese by putting it next to the warm chicken.
Kabob
Additional Ingredients for the Kabobs:
- Onion
- Pineapple
- Bell Pepper
- Rice (optional)
Kabobs are just fun. They’re so easy to make too! Just put one piece of raw chicken, a piece of an onion, a piece of a bell pepper, and a piece of pineapple on the grilling skewer until all of the pieces are gone. Then, just place the skewers on a grill until they’re cooked! I served them with rice, but that’s completely optional. It does help fill you up and is the perfect addition to the Teriyaki chicken!
Salad
Additional Ingredients for the Salad:
- Spring Mix
- Bell Pepper
- Onion
- Pineapple
- Ranch or Bleu Cheese Dressing (optional)
I loved the addition of bell pepper to this salad! It definitely adds a unique flavor. For a little extra added flavor, you could grill the bell pepper, onion, and pineapple (if you made the kabobs, just take them off the skewer and serve on a bed of lettuce)!
My boyfriend preferred the ranch dressing, but I thought this also tasted delicious with just a little bit of olive oil instead of dressing! It really let all the fresh flavors shine through!
