This Cilantro Lime Chicken Quinoa Salad is perfect for summer entertaining

When it comes to eating clean and healthy all the time, I’m the first to admit that I’m not the greatest at it. But living a full and balanced lifestyle? That’s more my speed. I work out almost every day and, when everything was closed down, I had the opportunity to diversify my meal prep skills a little bit. From prepping shredded chicken to making my own salad dressings, I began finding new ways of eating just a bit cleaner that didn’t take much extra time and I actually enjoyed. One of the things I made was this Cilantro Lime Chicken Quinoa Salad.

This Cilantro Lime Chicken Quinoa Salad recipe is easy, healthy, and delicious. It’s made in 3 separate parts, but don’t let that scare you off! I made the chicken and quinoa in a pressure cooker (optional), so the total cooking time was only about 15 minutes with prep time taking about another 15. If you don’t have a pressure cooker, the quinoa and chicken can both be cooked on a stovetop.

And – each part of the salad doesn’t necessarily have to be eaten in the same salad all week. The quinoa can be served as a side or as a base for taco bowls; the chicken can be used in salads, tacos, burritos, or even eaten plain; and the dressing will save for a while after it’s made to enjoy throughout the week! They are great individual recipes to make your meal prep a little bit easier, so you can get back to living your life.

Instructions
Cilantro Lime Quinoa
  1. Add the quinoa, salt, water, olive oil, and lime juice to an instant pot.
  2. Cook on high pressure for one minute.
  3. Let the steam release naturally, for about 10 mninutes.
  4. Once the pressure has fully released, remove the lid and stir in the chopped cilantro.
Taco Seasoned Shredded Chicken
  1. Add the water to the instant pot. Add the chicken on top followed by all the spices.
  2. Cook on high pressure for 6 minutes.
  3. Let the steam release naturally, for about 10 mninutes.
  4. Once the pressure has fully released, remove chicken from the pot and shred with a fork or a hand mixer.
Cilantro Lime Dressing
  1. Add all ingredients to a blender and blend until smooth. I recommend adding the olive oil, yogurt, lime juice, and avocado first.
Recipe Notes

Mix the salad mixings, shredded chicken, and quinoa in a large bowl for serving large groups or parties! Serve with the dressing and limes on the side.
