Cilantro Lime Quinoa
  1. Add the quinoa, salt, water, olive oil, and lime juice to an instant pot.
  2. Cook on high pressure for one minute.
  3. Let the steam release naturally, for about 10 mninutes.
  4. Once the pressure has fully released, remove the lid and stir in the chopped cilantro.
Taco Seasoned Shredded Chicken
  1. Add the water to the instant pot. Add the chicken on top followed by all the spices.
  2. Cook on high pressure for 6 minutes.
  3. Let the steam release naturally, for about 10 mninutes.
  4. Once the pressure has fully released, remove chicken from the pot and shred with a fork or a hand mixer.
Cilantro Lime Dressing
  1. Add all ingredients to a blender and blend until smooth. I recommend adding the olive oil, yogurt, lime juice, and avocado first.
Recipe Notes

Mix the salad mixings, shredded chicken, and quinoa in a large bowl for serving large groups or parties! Serve with the dressing and limes on the side.
