Ingredients

dry rice
(cooked in a rice cooker or pot)

chicken breast

black beans

enchilada verde sauce

whipping cream

cilantro
(we used frozen cubes)
salt and pepper
sour cream

Instructions
Cook the rice in a rice cooker or steam in a small pot. I used one cup of dry rice to two cups of water.
Boil the chicken until cooked and then shred with two forks.
Mix the chicken, enchilada sauce, and whipping cream in a pot. Warm over medium heat until well-incorporated and warm enough to serve.
Heat the black beans in a glass bowl in the microwave.
Serve rice, beans, and chicken mixture warm in a bowl and top with fresh onions, sour cream, and Good Foods Guacamole.
