So, here I am, back in the whole college grind and trying to make those cheap, tasty dinners I was once so good at. Normally, during the week, I’m covered by my sorority meal plan, but if I don’t make it to the grocery store on Friday, it looks like eating out the rest of the week for me. So I gave it the old college try with this recipe, combining basically all of my favorite things. (I also stocked up on mac n cheese and noodle cups, so I’m good just in case.)
So first comes the college student staple: pasta. A box of pasta costs under a dollar and feeds you for a whole week, so what’s not to love? Now, while I’ve been making some bomb healthy recipes lately, this is not one of them. This meal is carb-heavy. I’m not going to magically make the pasta better for you by masking it with vegetables, but it does taste good.
I (meaning my boyfriend), chopped up all the vegetables while I cooked the sausage and pasta. This did save us a bit of time.
After cooking the pasta and meat and once the vegetables were all chopped up, we layered all the ingredients in a brownie casserole dish and cooked it for another 20 minutes while we watched Parks and Rec. Super easy.
If you like pizza and casserole, this is the best of both worlds. I’ve been eating for lunch all week and I’m still not tired of it either. Win, win.

- 1 package Italian Sausage I used "hot" flavored
- 1 whole jalepeno sliced
- 1 whole bell pepper sliced, I used half of a red and half of an orange
- 1 half onion diced
- 6 whole mushrooms sliced
- 1 box pasta shells
- 1 jar marinara sauce
- 2 packages Mozarella cheese shredded
- Parmesean cheese optional

- Preheat the oven to 375 degrees.
- In a pot of boiling water, cook the pasta al dente. This is right before the pasta is fully cooked so it will still be a bit chewy.
- Brown the sausage in a pan on its own.
- In a glass baking dish (I used 9x13), layer one third of the marinara, one third of the pasta and one third of the sausage. Cover this layer with cheese, vegetables, and pepperoni. Repeat 2 more times.
- Cook in the oven for 20-25 minutes until the cheese is melted and bubbling. Serve warm and garnish with Parmesan if desired.
Depending on the depth of your dish, you may only get to make two layers. This is fine! The servings I've allotted are also quire generous and this could probably feed about ten.

Any pasta is totally my fave! I don’t eat meat but I would totally alter this recipe to be vegetarian because it looks so good!
It’s so easy to alter to be vegetarian! I was all veggies for a while, so I know what it’s like to alter a lot of recipes. This is so easy to make (and great for leftovers), so you could sauté more of your favorite vegetables to substitute for the meat!
I’ve never heard of a pizza casserol but it looks SO good and not too hard to make!
