College is hard, guys. It’s stressful and overwhelming. You can have two tests and two projects due in just a week and don’t forget about that mandatory event you have to attend for your club. Oh wait, did we mention that you also have your weekly meetings with professors, club meetings, and volunteering. No wonder I only wash my hair two days each week.
So what’s a busy girl to do?
I’m always looking for “shortcuts” to make my life just a little easier. Two words: meal prep. I started prepping my meals on Sunday this year and they are a complete lifesaver. Make a meal, throw it in the freezer, save it for a rainy day.
This little number comes from that exact same idea. Think of it as your homemade hot pocket, without the pocket. This tasty muffin-looking-thing has turkey sausage, eggs, spinach, mushrooms, and just a little bit of cheese to keep it all together. And yes, it actually tastes good.
It’s been a struggle trying to find breakfast ideas that give me both the protein I need and keep me held over until lunch. Smoothies, unfortunately, just don’t cut it all the time. These healthy mini quiches are the perfect mix of protein and carbs, and two holds me over just as well as two scrambled eggs with a side of turkey sausage. There’s a lot packed in here.
I made these in about 40 minutes tops and they have saved me so much time in the morning. I just toss them in the microwave and heat them up for about 30 seconds and eat them on my way to class. No dirty dishes, no fuss, I love it. They are the perfect solution to busy weeks or just lazy mornings when you just don’t want to cook. Lifesaver, I’m telling you.
I’m sharing this recipe for all you buys girls and guys out there that need a way to cut down time in their mornings too. Hope you enjoy it!

Mini Quiches
|
- 12 whole eggs
- 1 cup chopped spinach
- 1 cup chopped mushrooms
- 4 links chopped turkey sausage links
- 12 tsps shredded cheese
- salt and pepper to taste
- milk to scramble the eggs
Ingredients

- Preheat the oven to 350 degrees and spray a muffin tin with nonstick spray.
- In a large mixing bowl, whisk the eggs with the milk. Sprinkle with salt and pepper as desired. (The salt and pepper can also be added at the end.)
- Evenly spread the egg mixture between 12 muffin tins. In each one, add an equal amount of the chopped spinach, turkey sausage, and mushrooms. Add 1 tsp of shredded cheese on the top of each mini quiche.
- Bake the eggs in the oven for 20-25 minutes or until the eggs are cooked all the way through. The tops will be slightly browned. Let cool and refrigerate for later!

Hahaha no way! I’m trying to come up with more healthy meals while I’m in college so I don’t feel like I’m gross on my off days from eating so much junk! Definitely harder than I thought it would be!
I love quiches so much! My grandma makes the big ones with pie crusts so I can’t wait to try these mini ones out!
The ones with the crust definitely taste better, but these are good for you!

I totally make something like this almost every week! I do a big pie dish, and wrap each piece individually to have for the whole week! If I don’t have something ready-made for the week I will totally fail at eating healthy!
