Preheat the oven to 350 degrees snd spray two muffin tins with nonstick spray.
Combine the filling ingredients (apples, sugar, flour, nutmeg, cinnamon, and lemon juice) in a large mixing bowl and stir until throughly mixed.
Using a small glass, cut large circles from the pie dough until all the dough is used up.
Layer the dough along the inside of the muffin tin, fill with apple filling, and cover with another crust or lattice top. (You may cut slits in these before placing on top as desired.) Repeat until all the dough and filling has been used up.
Cook for 20-25 minutes or until the crust is golden brown on the top.
