One of the things I got really into during the lockdown was gardening and cooking from fresh ingredients. After all, I have a lot of fresh herbs to put to good use now! A few people at work had put together an online cooking class, which I was excited to join, but over the past few months, I worked to get the recipe just right. That meant adding some extra fresh herbs, red wine, and a little extra butter. After all, butter does make everything better.
I was never a huge fan of plain tomato sauce, but after making it from scratch, I was amazed how much better the sauce tasted. Now, I have a cheap and easy recipe that I make once a week! This is my go-to comfort food and I always keep the ingredients on hand for a quick dinner I can whip up without thinking.

- 2 tbsp olive oil
- 3-4 cloves garlic Minced garlic is acceptable
- 1 28 oz can Peeled Whole Tomatoes
- salt as desired
- pepper as desired
- red pepper flakes as desired
- Fresh Thyme Dried is an acceptable substitution
- Fresh Basil
- Fresh Oregano Dried is an acceptable substitution
- 3 tbsp butter
- 1/4 cup Red Wine
- Parmesean Optional
- Pasta noodles For Serving

- Heat the olive oil in a pan over medium high heat. Once heated, sauté minced garlic the minced garlic for about 1-2 minutes.
- Add one 28 oz can of whole tomato. Gently break apart the tomatoes with a wooden spoon and cook until the liquid has thickened (about 5-8 minutes).
- Add salt, pepper, and red pepper flakes as desired.
- Add fresh herbs. Save some basil for garnish at the end.
- Add approximately 2 tbsp butter and cook until melted and mixed throughout.
- Once the butter is completely melted, add a red wine (I used an old, cheap Cabernet I had on hand, about 1/4-1/2 cup) and cook until reduced.
- Once the wine has reduced, add one additional tbsp butter and continue to simmer until melted and mixed throughout.
- While cooking the sauce, prepare the desired amount of pasta according to package directions, minus about 1-2 minutes. The pasta will continue to cook in the sauce. Reserve approximately 1 cup of pasta water,
- Once the pasta is prepared, bring the pasta sauce to a simmer and add to the pasta sauce for the remaining 1-2 minutes of cooking time. Add pasta water as desired to thin the sauce to your desired consistency.
- Serve immediately and garnish with Parmesan and fresh basil as desired!
